Lemon curd

Lemon curd is really delicious and versatile. It makes an easy filling for cakes and tart and is great with muffins, scones and waffles.

3 egg yolks
¼ cup sugar
50gm butter (unsalted)
40ml lemon juice
½ tsp lemon zest
Pinch of salt


  • Whisk together egg yolks, sugar, lemon juice and lemon zest in a small saucepan. Place the saucepan over medium heat and stir continuously. Add butter and salt. Cook until mixture is thick enough to coat back of wooden spoon. It further thickens on cooling.
  • Remove from heat and transfer mixture to a bowl. Cover and set aside to cool. Pour it into a sterilised jar and refrigerate until serving.
