750ml Milk (full cream)
100gm Paneer (cottage cheese) finely grated
70gm Sugar (as per tatse)
¼ tin Condensed milk
4-5 Cardamom crushed
Saffron – few (soaked in 1tsp warm milk)
Nuts few (almond and pistachios chopped)
Boil milk in a heavy base pan and simmer till it’s slightly thick in consistency. Add condensed milk, sugar, saffron strands and cardamom. Keep stirring. Now add grated paneer and nuts. Allow it to simmer for 10-15 more minutes and remove from flame.
Bring it to room temperature. Refrigerate and serve chilled with chopped nuts.
Notes: Add 1tsp corn flour (mixed in 2tsp milk) as thickener, if you feel the kheer is not the right consistency.
