1 cup self-raising flour
3 tbsp ground almonds or almond meal
3 tbsp sugar
1/4 tsp baking soda
1 egg beaten lightly
3/4 cup milk
1 tsp lemon juice
1 tbsp oil
1 tbsp melted butter (optional)
- In a bowl mix self-raising flour and sugar. Add melted butter, egg, almond meal, baking soda and lemon juice. Gradually stir in the milk and mix until you reach a smooth consistency. Add more milk if very thick.
- Heat a non-stick frypan over medium heat and grease the pan with ½ tsp oil. Pour large spoonful of the mixture into the hot frying pan to make 6cm round pikelets. Flip when bubbles appear on the surface and the top is still quite gooey. Cook the other side until golden brown.
- Serve warm with a squeeze of lemon juice and butter or maple syrup.
