Pumpkin Halwa

This popular Indian dessert is usually made in festive season.  Its quick, easy and absolutely delicious.

350gm Pumpkin (yellow) grated
125gm Raw Sugar
50gm Desiccated coconut powder
2tbsp Ghee
3 Cardamoms crushed
Few – Cashew nuts & Pistachios
Salt – pinch

Heat ghee in a non-stick pan.  Add grated pumpkin and cook on low heat till tender.  Add sugar and stir till the mixture thickens a bit.  Then add coconut powder, cardamom and a pinch of salt.  Keep stirring till the moisture evaporates and gets almost dry (tastes better).  Remove from heat, place on a serving tray and decorate with chopped nuts.
