Healthy Patties/Tikki


Enjoy an easy recipe with delicious, satisfying results!

Ingredients
• 1 Beetroot medium (boiled and grated)
• 1 Sweet Potato medium (boiled & mashed)
• 1 Plantain medium/large (boiled & mashed)
• 2 tbsp Besan/Chickpea flour
• 1 tsp Amchur/ mango powder
• 1 tsp roasted cumin powder
• 1 tsp ginger (finely chopped)
• 2-3 green chillies (finely chopped) or as per taste
• A handful of coriander leaves (finely chopped)
• Salt as per taste
• Oil for shallow frying

Method
In a large bowl mash sweet potato and plantain. Add grated beetroot, ginger, green chilli, coriander leaves, besan, amchur powder, roasted cumin powder and salt.
Mix until well combined to form a thick dough.
Divide into equal portions and flatten them into a tikki/pattie shape.
Heat oil in a shallow non-stick frypan and cook gently over medium heat, turning over once or twice until crisp.
Serve hot with tomato ketchup and coriander chutney.

Notes:
You can make the patties with any of the above two veggie combinations or even individually.
You may make them ahead of time or freeze them for later use.
Serve it as a snack or turn it into a veggie burger
