A delicious soup with great colour and flavour.
1 Ripe Avocado (pitted, peeled and diced)
1 tbsp Sour cream
750ml Vegetable/ chicken broth
Salt and pepper
Coriander leaves for garnish
Place chopped avocado in a blender until smooth.
Heat the broth in a pan (do not boil) add the avocado mix and sour cream.
Remove from heat. Season with salt, pepper and lime juice.
Pour the soup into individual bowls and garnish with chopped coriander leaves.
