Preparation time 45 minutes Yields: 10-12 pieces
• 2 cup Carrot (grated)
• 180 – 200 ml Evaporated milk
• 2-3 tbsp Ghee
• 1 cup Desiccated Coconut
• 1/4 – 1/3 cup Sugar (as per taste)
• 1/4 tsp cardamom powder
• 1/2 cup Broken Cashew nuts
• Cashew, pistachio and raisins for garnish
Heat ghee in a heavy bottom pan. Add grated carrot and stir continuously till its dry. Add desiccated coconut and stir 1-2 minutes till you get a nice aroma. Now add evaporated milk, sugar, cardamom powder and cashew nuts. Keep stirring continuously until the mixture is thick and comes together in the middle of the pan. Remove from heat and spread on a greased tray. Garnish with raisins and nuts.
Keep it in the fridge to set firmly for an hour or so. Cut into slices of desired shape. Enjoy the authentic Gajar ka barfi this winter.
