Quick and easy to make pasta recipe that will never fail to impress.
250gm pasta sauce
1 tbsp Olive oil
1 onion chopped
2 cloves garlic minced
2 cups chopped veg – capsicum, zuccinni, pumpkin, snow peas
2 tbsp cream/sour cream
1 tsp chilli flakes (as per taste)
2-3 Green onion finely chopped
Cheese for garnish
Cook the pasta according to package instructions. Drain well in a colander and reserve 1 cup liquid for later use or in case sauce gets a bit dry.
Place a sauce pan over medium heat; add oil. Add garlic and onion to pan. Cook stirring occasionally until onion begins to soften. Add the chopped vegetables, stir and cook covered for about 7-10 minutes on low. Remove lid add chilli flakes, salt and the pasta sauce. Increase flame to medium. Add ½ cup reserved liquid. Cook until sauce begins to cling to pasta, 3 to 4 minutes. Add chopped green onions, cook for 30 seconds or more. Stir in cream/sour cream and remove from flame.
Serve in bowls and sprinkle with cheese.
