Gulab Jamun

Gulab Jamun is one of the most popular desserts in India. This delicious dessert certainly leaves the tongue craving for more.
Ingredients
1 cup Milk powder
¼ cup Plain flour
100ml thickened cream
1/8 tsp Baking soda
Vegetable oil for frying

For syrup
1cup sugar
2 cup water
Cardamom powder pinch

Method
In a bowl mix together milk powder, flour and baking soda. Slowly add thickened cream little by little and gently mix. The dough should be soft but not sticky. Do not over knead.
Meanwhile in a deep pan add the ingredients of the syrup and heat over medium flame stirring occasionally for 10 minutes. Remove from flame.

Grease your palms with oil and roll the dough into 12 equal sized balls that are smooth and creaseless. The shape of the Jamuns can be round or oblong. Remember they increase in size after frying and soaking in sugar syrup.

Heat oil in a deep frying pan over medium heat. Test the temperature by dropping a tiny portion of the mixture into hot oil. It should rise up immediately without changing colour. Lower the flame.
Now gently slide the Jamuns into the oil. Turn them frequently making sure they brown evenly. Drain and immediately add the jamuns into the warm syrup.
Leave the Jamuns for 2 hours in the syrup before serving.

Serving suggestions
a) Gulab Jamuns can be served with the syrup.
b) Removed from the syrup and served with vanilla ice cream/ garnished with dried fruit (pistachio and almond)/ rolled in desiccated coconut.
