Sago pudding

This dessert is very refreshing during the summer months. Enjoy the enriching & delicious sago dessert.

Ingredients
50gm Sago
200ml coconut milk or milk
300ml water
3 tbsp condensed milk
2 tsp sugar (as per taste)
½ mango pulp
½ mango into cubes
1 apricot (medium)
2 tbsp honey
1/8 tsp grounded cardamom

Method
Boil water in a heavy based saucepan. Add sago and bring to boil stirring occasionally. Lower the flame and cook for about 10 minutes or until it becomes transparent. Add coconut milk, condensed milk, cardamom and sugar. Simmer gently until mixture is creamy/ slightly thick. Remove from flame.

Spoon the sago mixture between 4 glass bowls/glasses. Cover with plastic wrap and refrigerate for 30 minutes or until slightly chilled.

Meanwhile blend together mango, apricot and honey. Pour equally over the chilled sago mixture in the glass bowls. Garnish with cut mango pieces. Serve immediately.
