Chilli Chicken

Chilli chicken restaurant style. One of the few entrees you would not want to miss.
Ingredients
700 gms boneless chicken diced
Half bunch of curry leaves
15-20 green chillies or as per taste
1tsp turmeric powder
1tsp chilli powder
1tbsp ginger garlic paste
1tsp garam masala
Salt as per taste
Half a bunch coriander to garnish
5 table spoons of Vegetable oil
3 table spoons of sour thick yogurt
Mix 1/4th spoon of food color (orange preferred) in 1/4th cup of milk

Marinate
Mix the chicken with salt, chilli powder, turmeric powder, ginger garlic paste, garam masala and yogurt. Cover and marinate for an hour.

Method (Preperation time 30-40 mins)
Heat oil in a Wok, fry curry leaves on low flame to crisp and place on a paper towel to remove excess oil. Similarly fry the green chilies to crisp and do the same as above. Do not cover the Wok until the preparation is complete. In the remaining oil fry the marinated chicken on medium flame for 15 minutes. When chicken leaves water and gets slightly cooked and fried, add the fried curry leaves and green chillies to it and sauté for 5 – 10mins. Now add the food color and sauté on low flame till chicken is cooked. Garnish with coriander and serve hot.

Serving suggestions – As an Entrée or a side dish with rice/roti. ENJOY!!!!!
