Radish coconut curry

Radish coconut curry is healthy and an easy to make recipe. It may not be your favourite vegetable but is one of the healthiest. The water content in radish keeps the skin moisturised and body hydrated. It’s also rich in fibre.

Radish coconut curry
Ingredients
1 White Radish grated (medium)
¼ cup fresh coconut/ desiccated
2 tsp oil
¼ cup Moon dal/Pesara pappu/green gram
½ tsp Mustard
¼ tsp Jeera
½ tsp Black gram
1 Green chilli
1 Red chilli
Few Curry leaves
Pinch Heengh/ asafoetida
Salt
2 tbsp fresh coriander leaves

Method
Soak green gram for about 30 minutes.
Heat oil in a heavy base pan. Add asafoetida, mustard seeds, jeera, black gram, red chilli and curry leaves. Give it a stir.
Add green chilli, grated radish, soaked green gram and 1 cup water.
Cook on low flame covered stirring occasionally. When done add fresh grated coconut and salt, gently mix.
Remove from flame. Garnish with coriander leaves.
Serve with steamed rice, dal and chatney.
