Boondi laddu is a famous Indian dessert prepared specially during the festive season..
Ingredients
1 cup Besan/chana flour
1 cup sugar
Cashew nuts and raisins
Cardamom powder
Baking soda – pinch
Boondi strainer
1 tsp Ghee
Method
Roast cashew nuts and raisins separately with 1 tsp. ghee and keep aside.
Sugar syrup – Add sugar, cardamom powder and ¼ cup of water in a pan and boil till you get one string consistency. Remove from stove.
Batter – Mix besan and baking soda in a bowl. Add water little by little to make a batter of smooth pouring consistency.
Boondi – Heat oil in a pan, when hot pour the batter in the strainer with a ladle and position it over the pan. Spread batter lightly with the ladle. Let drain the boondi in hot oil. Fry till golden (2-3 seconds); boondi should not be crisp as they would not absorb the sugar syrup. Repeat the process till the batter is complete. Add directly to the hot sugar syrup along with cashew nuts and raisins.
Prepare the laddu with moist fingers when the mixture is warm.
