Nuvvulu podi is a simple and easy to make spice powder, popular in Andhra Pradesh and Telangana. It’s served with steamed rice and ghee, idli, dosa, and Uttappam. These tiny nutty-flavoured seeds are rich in calcium, iron and fibre.
Ingredients
100gm Sesame Seeds (white)
2 Tbsp chana dal
1 tsp cumin/ jeera seeds
10 dry red chilli
3 garlic cloves chopped (optional)
5 sprigs curry leaves
Salt to taste
Method
1. Dry roast chana dal in a pan while stirring. Transfer to a plate and let it cool.
2. In the same pan add cumin seeds and dry red chillies and roast for a minute. To this add garlic and curry leaves and fry for a minute. Remove from flame and cool separately.
3. Dry roast sesame seeds on very low flame, stirring continuously till golden brown. Remove from flame and allow it to cool completely.
4. Grind the roasted chana dal, then grind together with roasted cumin seeds, red chilli, garlic and curry leaves to make a fine powder.
5. Add sesame seeds to the above and coarsely grind the sesame seeds (10 – 12 seconds) using the pulse button. Transfer the spice mix into a bowl and mix in salt.
6. Once it cools down, store in an air-tight container.
