Boondi Raita


Boondi Raita is a very traditional North Indian Raita, served specially during the festive season.
Ingredients
1/4 cup Boondi
½ cup curd /natural yoghurt
½ tsp roasted cumin seeds powdered
1 green chili (finely chopped)
salt to taste
pinch of sugar

Garnish
red chilli powder
roasted cumin seed
kala namak/ black salt
coriander leaves finely chopped

Method
1. Soak Boondi in warm water for 5 minutes and squeeze the water gently. Keep aside
2. Whisk curd in a bowl till smooth, add some water to make it custard consistency.
3. To this add boondi, salt, green chilli, and roasted cumin seeds and mix gently.
4. Garnish with a sprinkle of chilli powder, coarsely ground roast cumin, black salt and a few chopped coriander leaves
5. Serve chilled.

Notes: You can buy readymade Boondi from an Indian store. An Excess amount of boondi can be stored in the freezer.
