A perfect way to use up your overly ripe bananas. This recipe is so easy to make and doesn’t need a lot of preparation time. Perfect for a tea time snack or to just have it together with some vanilla or coconut ice cream.
Ingredients
2 medium ripe bananas
100gm Plain flour/ All Purpose
1tsp sugar/jaggery (powdered/crushed)
¼ tsp baking soda
pinch of salt
Oil for deep frying
Method
1. Combine flour, baking soda and salt in a bowl and keep aside.
2. In a separate bowl, mash the ripe bananas with a fork, add sugar/jaggery and mix.
3. Stir flour mixture into the above banana mix until the batter is well combined.
4. Rest the batter for 10minutes.
5. Heat oil in a heavy base pan to medium heat.
6. Drop a spoonful of batter into the pan in batches, deep fry to golden brown.
7. Transfer to a paper towel.
8. Serve hot with your favourite beverage.
