Palak pakoras are delicious Indian spinach fritters; a perfect snack with a hot cup of tea.
Ingredients
1 ½ cup Palak finely chopped
2 tbsp coriander leaves
1 cup Besan/Chickpea flour
2 tbsp rice flour
1-2 green chilli finely chopped
1 tsp ajwain/carom seeds
1/8 tsp heeng/asafoetida
1 tsp pepper
Salt as per taste
½ cup water
¼ tsp baking soda
1 tbsp warm to hot oil
1 tsp lemon juice
Oil for deep frying
Method
Take a deep mixing bowl, add palak, coriander leaves, besan, rice flour, green chilli, ajwain, asafoetida, pepper and salt. Add ½ cup water and mix properly. Then add warm to hot oil, lemon juice, baking soda and mix. Now the batter is ready. Do not keep the batter mix for too long before cooking.
Heat oil in a pan over medium heat for deep frying. When hot, drop spoonfuls of the batter into the oil and fry to golden brown. Drain the oil from the pakoras on a kitchen paper.
Serve hot with chutney or tomato sauce.
