Coconut Boorelu or Kobbari Boorelu is a traditional (sweet) recipe from South India.
Ingredients
1 Kg Rice
1 Coconut
3/4 Kg Jaggery
10 Cardamom powdered
Oil for deep frying
Method:
Soak rice overnight or for 4 hours
Drain rice and make fine powder
Grate coconut
Melt jaggery with 1/2 cup water on medium flame
Test the sugary syrup, should be of soft ball consistency
Add grated coconut, stir and cook for two minutes
Slowly add rice & cardamom powder and mix to form a soft dough
Remove from flame and let it cool
Rub your fingers with oil and roll out small lemon size balls
Heat oil in a Kadai and deep fry rolled “Boorelu” till golden brown. They will stay fresh for a week to ten days
