Instant Veg Idli is a healthy South Indian breakfast (steamed semolina-veg dumplings). No more hassles of grinding or fermenting, ready in 45 minutes.
Ingredients
1 cup Semolina/Suji
1 cup Curd/Yogurt
¼ cup Coriander leaves – finely chopped
8 Cashew nuts
1 Carrot grated (small)
6 Beans – finely chopped
2 Cauliflower floret grated
1/4 tsp Baking soda
Ghee -1 tbsp
Salt as required
For seasoning
1 tsp Mustard
½ tsp Urad dal
1 tsp Chana dal/Bengal gram
1 Green chilli – finely chopped
1/2” Ginger – grated
Curry leaves – few
Heeng/Asafoetida pinch
Method
Heat ghee in a heavy base pan, add mustard seed. As they crackle add heeng, chana dal and urad dal. Add green chilli, ginger, cashew nuts and curry leaves. Later add grated carrot and cauliflower, chopped bean, salt and fry for a minute or two. Add Suji and roast till you get a nice aroma and changes slightly in colour. Remove from flame and allow it to cool.
To the above cooled mixture add curd, coriander leaves and baking soda. Add water little by little mixing to form idli batter consistency (not too thick). Keep aside covered for 25-30 minutes. Pour the batter into greased idli moulds and steam for 12 minutes. Remove from the moulds and serve hot with coconut chatney, sambar or idli podi.
