This recipe comes from the northern state of Punjab, India. Palak Paratha is an Indian bread made with whole wheat flour, spinach and spices. This is simple and a perfect way to enjoy the goodness of spinach.
Ingredients
2 cups Palak (Spinach) chopped
1 1/2 cup Atta (whole wheat flour)
1-2 Green chilli (as per taste)
1 tsp Ajwain (carom seeds)
1 tbsp Ghee
salt to taste
Extra atta for rolling
Oil or ghee for cooking
Method
Place spinach, green chilli and little water into a blender to make a puree.
In a bowl add wheat flour, ajwain, salt and ghee. Mix with your fingers.
To this add the spinach puree. Now slowly add just enough water to knead to semi soft dough. Cover & let it rest for 15 minutes.
Divide into equal part. Roll each portion out with a rolling pin into a 6-7 inch circle.
Use a little flour for rolling.
Heat tava/pan on medium and cook the rolled paratha on both sides.
Gently brush with oil/ghee on both sides and fry it to nice crispy parathas.
Serve hot with pickle and yogurt.
