Shrikhand is a popular dessert of Maharashtra and Gujarat. It’s traditionally made from strained yogurt/curd. A popular variation of shrikhand in Maharashtra is Amrakhand, it gets its name by simply adding mango pulp to it.
Ingredients
2 cups fresh thick yoghurt (curd)
2 cups mango pulp
2-3 tsp sugar (as per taste)
1/8 tsp cardamom powder
pinch saffron strands (soak in 1 tsp warm water)
Garnish
chopped almonds/ pistachio
mango cubes
Method:
Use freshly prepared or store brought thick yogurt.
First remove the water content in the yogurt by hanging it in a muslin/cheese cloth and leave it for an hour or two. The result, you get a thick creamy yogurt.
Make mango puree. To this add finely powdered sugar, thick yogurt and cardamom powder. Blend till smooth. Then add the saffron and gently mix.
Pour into individual serving bowls. Cover with plastic wrap and refrigerate. Serve chilled.
Garnish with cut mango cubes and chopped almonds/pistachio.
