Capsicum green, red, yellow -1/2 cup each (thinly sliced)
125gm mushroom thinly sliced
½ cup corn or baby corn
½ cup broccoli
1 onion large
1tsp jeera
1tsp garlic paste
1 red chilli (dry)
½ tsp chilli flakes
1 tomato (cut into 4)
1 tsp oregano
1 tsp basil,
1 tsp lemon juice
salt
pepper
Method
Heat 3 tsp olive oil in a heavy base pan. Add jeera, garlic paste, red chilli, onion and fry. When onions turn translucent add the 3 coloured capsicum pieces, broccoli and cook covered for 5 minutes. Add tomato, stir and cook covered for another 5 minutes. Now add steamed mushrooms and corn, pepper, basil, oregano, chilli flakes and salt. Stir for 2 minutes or until moisture evaporates and vegetables are still crunchy. Lastly add lemon juice and remove from heat.
