Methi Paratha


Methi Paratha is traditional North Indian flat bread made with methi (fenugreek) leaves and wholemeal flour. This simple flaky bread just melts in your mouth and is rich in nutrients.

Ingredients
1 cup Methi (fenugreek) leaves tightly packed
1 1/2 cups Whole wheat flour
1/2 cups Besan (Gram) flour
1/2 inch Ginger chopped
2 Green chilli
1/2 tsp Turmeric pwd
1tsp Ajwain
Salt to taste
Ghee for serving
Cooking oil

Method
1.Pick Methi leaves and wash. Coarsely grind (without water) Methi leaves, green chilli and ginger. In a bowl add wheat flour, besan, turmeric powder, ajwain, salt, 2 tsp of oil and the above Methi mix.
2.Add water little by little mixing thoroughly to form medium firm dough. Knead for few more minutes to form smoother dough. Set it aside for 20 minutes.
3.Divide the dough into golf size balls and roll into round parathas. Place the rolled parathas on a hot tava or griddle and roast on both sides. Drizzle oil while flipping. Small brown spots should appear on both sides.
4.Serve hot with a dash of ghee, curd/raita and mango pickle (North Indian).
