Orange Zest is the name given to the outer thin layer of the orange peel. It has many medicinal benefits and practical uses. The zest is often used to enrich flavours in desserts, sauces, gravies, and some meat dishes. It’s a nice addition to black tea or masala chai.
Make your own orange zest
Use a zester or a sharp vegetable peeler to remove the upper thin layer. Spread orange zest in a single layer on a tray and leave it for a day or two to dry. The result should be dry and brittle. Store them in airtight bottle in a cool dark place. You may use the same method of preparation for any citrus fruit.
