This is a delicious mouth-watering stir fry in spicy gravy. Enjoy the North Indian restaurant style Bhindi masala.
250gm Bhindi / Okra
1 tbsp Besan / Chickpea flour
½ cup Tomato puree
1 Onion finely chopped
1tsp Ginger garlic paste
½ tsp Garam masala
2 tsp Red chilli powder or as per taste
½ tsp Turmeric
25gm ground cashew nuts
2- 2½ tbsp Oil
1tbsp Chat masala
2 tsp desiccated coconut
Wash, dry and chop Bhindi into 1.5 to 2 inches. Slit and stuff with a mix of chat masala & desiccated coconut. Then sprinkle a tablespoon of besan over them.
In a heavy base pan heat 1½ tbsp oil. Add Bhindi and fry on low to medium till cooked. Keep aside.
In the same pan add the remaining oil, then add onion and ginger garlic paste. Fry till the onion turns golden brown. Add tomato puree, turmeric, chilli powder, garam masala and salt. Fry well till oil separates from the gravy.
Mix 100ml water to ground cashew nut powder and pour into the tomato gravy. Cook for few minutes. Add the fried Bhindi and mix, cook for another 2 minutes.
Turn off the heat. Serve hot with steamed rice or roti.
