Coconut Cookies

Try these delicious eggless cookies, easy to make and a perfect treat with the afternoon tea.
Makes 20
Ingredients
1 cup plain flour
½ cup desiccated coconut
½ cup Caster sugar (keep aside 2 tbsp for rolling)
1 tbsp Semolina
100 gm unsalted butter (room temperature)
½ tsp baking powder
1-2 tsp milk (if dough is difficult to bind)

Method
• Pre-heat oven at 160°C and line the baking tray with parchment paper.
• Take flour, desiccated coconut, semolina, and baking powder in a bowl and mix, keep aside.
• In a separate bowl whisk caster sugar and butter until light and fluffy.
• Add the flour mix to the above and mix together until a dough consistency is formed.
• Add milk if the dough is difficult to bind.
• Divide the dough into equal portions and shape them into fairly smooth balls.
• Roll cookie balls in 2 tbsp caster sugar that was kept aside.
• Place on the parchment paper few inches apart and gently press the cookie dough with a fork.
• Bake at 160°C for 10 minutes (bake till the edges of the cookies just start to change colour).
• Allow to cool on a wire rack.
• Store in airtight container.
