Mung Sprouts Salad

2 cups mung bean sprouted
1cup carrot
½ cup sweet potato
1 cup tomato chopped
1 cup cucumber chopped
1 green chilli finely chopped
1 small pc thinly sliced ginger
Cilantro few
3 tsp lemon juice
Salt & pepper to taste
Optional: ½ cup of paneer, ½ cup of avacado pieces, ½ cup boiled chick peas

Method
Wash mung bean and soak in a warm environment for 2-3 days or until they develop long sprouts Wash all the vegetables. Peel carrot, sweet potato and cucumber. Grate carrot and sweet potato. Mix well all the ingredients in a bowl. Add lemon juice, salt and pepper to taste. Mix well again. Additionally, you can add paneer, avacado pieces,and chick peas. This makes a nourishing and nutritious salad eaten as a snack or a meal.
